Sample Curry Dishes
**
Some main Curry dishes are called “Hsi Pyan Hin” which means where the oil has returned. This refers to the cooking process where the basic gravy ingredients of aromatic vegetables together with the meat has been cooked with water and when the liquid evaporates, the oil sizzles and rises to the surface. Another type of curry is the “Yay Cho Hin”, which has watery gravy and much less oil and the same type of aromatic garnish and seasoning. Fish and prawns are often cooked in this manner.
